 “Guilt-Free Garlic Parmesan Zucchini Pasta Recipe”

 

It’s another quick recipe that’s loaded with fresh ingredients. Your body and taste buds will thank you (you’re welcome) That’s why it’s “guilt-free”, of course! This recipe calls for cooking so whip out those skills along with the previously required tools to make those “oodles and zoodles”. Yes, you’ll have to put up with these watery things again, so make sure you follow each step accordingly

This recipe yields 4 servings. You’ll need

4 medium zucchini

3 tbsps extra virgin olive oil

1 tbsp minced garlic

¼ to ½ tsp crushed red pepper flakes, depending on how spicy you like the pasta

2 medium tomatoes, chopped, see note (about 12 ounces)
1/2 cup shredded parmesan cheese, plus more for serving
1 cup basil leaves, torn into pieces
1 teaspoon cornstarch
2 teaspoons cold water
Salt, to taste

Prep the Zoodles

Trim and spiralize ( or use a mandoline slicer or vegetable peeler). Try to keep them about the length of spaghetti

 

Cook the Zoodles

  1. Put olive oil, garlic and red pepper flakes to a large, deep skillet over medium heat. Add zoodles when the oil starts to bubble. Use pasta tongs to toss the zoodles. Cook for 5-7 minutes (al dente) Toss them as they cook

  2. Add tomatoes, basil, and parmesan cheese and cook for one minute. Transfer to a plate, but leave liquid in the skillet

  3. Simmer the liquid. In a bowl, add cornstarch and cold water to whisk into the simmering liquid. Whisk and cook simultaneously until it thickens into the sauce for about one minute. Salt to taste

  4. Pour the sauce over zucchini, tomatoes, and basil. Add more parmesan cheese on top and serve

Almost everyone could attest to having a moment in their life when they look in the fridge and find that there’s nothing for them to snack on, but something to cook. But after a long day of school, it”s hard not to be lazy. So, if you don’t want to cook, here’s a great recipe that I just know you would enjoy (unless you don’t like Yogurt). You don’t have to feel tempted to eat junk, go to your local supermarket ( or you to pick out these ingredients for a delicious parfait!


 

Pina Colada Yogurt Parfait - Yields Two Servings

 

  • 2 cups of European Style Yogurt

  • 1 cup of fresh pineapple, chopped

  • ½ cup, lightly toasted unsweetened coconut flakes (optional)

  • 2 tbsp of honey plus 1 tsp for drizzling (Or stevia - 1 Packet per parfait)

  • 4 tsp chia seeds - (optional)

 

This recipe is enough for two servings so if you wish, prepare it in two separate cups. Mix the yogurt in a bowl with 2 tbsp of honey/ stevia and 3 tsps of chia seeds. Leave it to the side.

Layer tsps of pineapple, a little coconut flakes and yogurt. Make as many layers as desired, but end with pineapple and coconut on top each time. Add the remainder of chia seeds and trickle the remaining tsp of honey on top. Serve it straightaway and enjoy!
